Poppy seed-quark cake is an easy cake that you can also make as flourless or gluten-free. At the end of the recipe I’m going to suggest two more variations.
Sunday lunch, special event or just afternoon tea? Do you need a relatively effortless cake and you don’t have much time? You can whip up this poppy seed-quark cake in almost no time.
Moreover, if you need a flourless or gluten-free recipe, you just need to change one ingredient and that’s it! Also, I’ll tell you how to spice up the filling if you want.

Supplies
Base:
- 250 g/8.8 oz of lightly coarse (flourless: oat flakes; gluten-free: gluten-free oat flakes or almond flour)
- 90 g/3.2 oz of unsalted butter
- 60 g/2.1 oz of sugar
- 100 ml/3.4 oz of milk
- 1 egg
- 1 tsp of baking soda
- pinch of salt
Quark filling:
- 500 g/17.6 oz of quark (use other unsalted fresh cheese if you don’t have quark)
- 60 g/2.1 oz of sugar
- 1 egg
- 100 ml/3.4 oz of milk (optional)
Poppy seed filling:
- 200 g/7 oz of ground poppy seed
- 60 g/2.1 oz of liquid honey
- 3 medium apples
Streusel
- 40 g/1.4 oz of coarse flour (or oat flakes, gluten-free oat flakes, almond flour…)
- 20 g/0.7 oz of unsalted butter
- 15 g/0.5 oz of sugar
Other
- small baking tray
- baking paper
- grater
Poppy seed-quark cake – Recipe
Base
Let the butter soften at room temperature. If you’re using oat flakes, blend them in a blender until they have a flour-like texture. Place a sheet of baking paper in the tray. Mix all the ingredients for the base and spread the base evenly on the paper.
Quark filling
Mix all the ingredients. Add milk if the quark is too hard. Cover the base with the quark mixture and even.
Poppy seed filling
Peel the apples and grate them coarsely. Mix them with the poppy seeds and honey. Spread this filling over the quark.
Streusel
Again, the butter should be soft. Blend the oat flakes if you’re using them. With your hands combine butter, flour/oat flakes and sugar and sprinkle the streusel over the poppy seed.
Baking and serving
Preheat the oven at 180°C/356 °F and bake the cake for 40 minutes. Let it cool down and serve cut into rectangles.
How to make your poppy seed-quark cake even better?
If you think there’s something missing you can try the following:
- Grate the peel of one chemically untreated lemon and mix it into the quark, the taste will be lightly picant.
- You can skip the apples and instead boil the poppy seed with some milk for 5 minutes over very low heat and mix it with 2 tbsp of povidla or regular plum jam.
