Candy glass is a great decoration for cakes and muffins and it’s fun and easy to make!
Candy glass is often used for decorations which are supposed to look like ice and of course also for spooky cakes, cupcakes and other sweets that require shreds of glass tat you can actually eat. I used the candy glass in my Bloody Valentine Cake.

It’s very easy to make, however, if you have small children, make sure they don’t come anywhere near the stove. The mixture will be very hot and the kids could get burnt very easily.
Supplies
- 1 cup of sugar
- 1/3 cup of rice or corn syrup (or darker syrup such as date for darker glass)
- 1/3 cup of water
- candy thermometer
- baking parchment
- eventually also gel food colorant or aromas
How to make Candy Glass
Put the baking parchment on a tray or other smooth surface for the glass to rest.
Put sugar, syrup and water into a saucepan that is big enough, the mixture is going to have a lot of foam.
Place the candy thermometer in the mixture and boil it over medium hear. If you want to add any colorant or aroma, now is the time.
When the temperature reaches 149 °C/300 °F remove the saucepan from the stove immediatelly and pour the mixture onto the parchment.
Let it cool down, then cover the tray and let the candy glass rest for at least 2 hours in a cold place.
Peel the glass off the parchment.
Then break the glass in any way you choose. Peel off the parchment and his the kitchen table with the glass or pick up the glass and let if fall back onto the tray. Be careful with te pieces, although it’s sugar glass, it can be pretty sharp.
